Recipe of the Month - March 2019
 
From Our Provincial Grand Master.
Delicious Apple Cake. 
"This recipe was given to me many years ago by an old friend,
a Master Baker and a good Mason, Alan Burton of Blackpool”
6oz Castor Sugar
6oz Soft Butter
6oz Self raising Flour
1/2 tspn Baking Powder
3    Eggs
2    Medium Dessert Apples
 
This is an all-in recipe.
Put the sugar, butter, flour, eggs + baking powder in a mixing bowl.
Combine at slow speed, then beat at high speed for five minutes.
Peel and core one and a half apples, then chop small, fold into the mixture.
Put the mixture into a lined 8” spring loaded cake tin.
Slice the unpeeled half of the remaining apple into 12 thin slices, arrange on the top of the mixture.
Bake at 175 C in the centre of the oven for 1 hour (approx.) or until firm to the touch.
When cool brush with a little apricot jam to glaze.
 
Eat on its own or be indulgent and serve with a little clotted cream.
Many flavours, coffee, walnut, lemon etc can be added.
it also lends itself to adding a filling of buttercream or fresh cream to make a sandwich cake.
